Makes: 4 – 6 servings Prep/Cook Time: 20 minutes
INGREDIENTS
1 packet PVP Mushroom Soup & Gravy Mix
10 ounces frozen spinach
½ large, or one small, yellow onion, small diced
1 teaspoon garlic, minced
1 cup unsweetened dairy-free milk*
½ cup dairy free sour cream
2 tablespoons dairy free butter
¼ teaspoon salt
¼ teaspoon pepper
**Avoid using oat milk as Mushroom Soup will not set up properly.
INSTRUCTIONS
- In a small bowl, combine Mushroom Soup Mix and 1 cup milk and stir until well combined. Set aside.
- In a medium sauté pan, over medium heat…add butter, onions, salt and pepper and cook until onions are soft and lightly golden.
- Add frozen spinach and heat through.
- Stir in soup mixture, cover and simmer for 5 minutes.
- Remove from heat and stir in sour cream.
